Creamy Sun-Dried Tomato Parmesan Chicken

Ingredients
- 4, boneless and skinless chicken breasts
- 2 tbsp olive oil
- 1/4 cup, oil-packed and chopped sun-dried tomatoes
- 1/2 cup heavy cream
- 1/4 cup grated parmesan
- 2 tbsp all-purpose flour
- 1/4 cup chicken broth
- 1/2 tsp dried basil
- to taste salt
- to taste pepper
- 1/4 cup, chopped fresh parsley
Instructions
- Step 1: Season 4 chicken breasts with salt and pepper. Heat 2 tbsp olive oil in a skillet over medium-high heat. Add chicken and cook for 5 minutes per side until golden brown and internal temperature reaches 165°F.
- Step 2: Remove chicken and set aside. Add 1/4 cup chopped sun-dried tomatoes to the skillet and cook for 1 minute until fragrant.
- Step 3: Sprinkle 2 tbsp all-purpose flour over the tomatoes and cook for 1 minute, stirring constantly.
- Step 4: Gradually whisk in 1/2 cup heavy cream and 1/4 cup chicken broth, then add 1/4 cup grated parmesan and 1/2 tsp dried basil. Cook for 3 minutes until sauce thickens.
- Step 5: Return chicken to skillet, turning to coat in sauce. Simmer for 2 minutes until heated through.
- Step 6: Garnish with 1/4 cup chopped fresh parsley and serve immediately.
