Cucumber-Dill Summer Salad

- 2 medium, thinly sliced cucumber
- 1/4 cup, chopped fresh dill
- 2 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1/4 cup extra-virgin olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1/4 cup, halved cherry tomatoes
Instructions
- Step 1: Place 2 thinly sliced medium cucumbers in a large bowl. Add 1/4 cup chopped fresh dill and 1/4 cup halved cherry tomatoes.
- Step 2: In a small bowl, whisk together 2 tbsp red wine vinegar, 1 tbsp lemon juice, 1/4 cup extra-virgin olive oil, 1/4 tsp salt, and 1/8 tsp black pepper until emulsified.
