Cucumber-Tomato Gazpacho with Fresh Mint

- 2 medium cucumber
- 1 cup diced ripe tomato
- 1/4 cup finely chopped red onion
- 1/4 cup packed fresh mint leaves
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1/2 cup cold water
Instructions
- Step 1: Place 2 peeled and diced medium cucumbers (1-inch pieces), 1 cup diced ripe tomato, and 1/4 cup finely chopped red onion in a blender.
- Step 2: Add 1/4 cup packed fresh mint leaves, 2 tbsp extra virgin olive oil, 1 tbsp lemon juice, and 1/2 cup cold water to the blender.
- Step 3: Blend on low speed for 30 seconds, then increase to high for 60 seconds until completely smooth and chilled, scraping down sides as needed.
- Step 4: Strain through a fine-mesh sieve into a bowl to remove any fibrous bits, discarding solids.
- Step 5: Chill for at least 2 hours before serving to allow flavors to meld.
