- 2 large, peeled and diced into 1/2-inch cubes sweet potatoes
- 1 head, cut into florets broccoli
- 2 tbsp avocado oil
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F (220°C). Toss sweet potatoes and broccoli florets with 1 tbsp avocado oil, ground cumin, salt, and black pepper in a large bowl until evenly coated.
- Step 2: Spread vegetables in a single layer on a parchment-lined baking sheet and roast for 25-30 minutes, stirring once halfway through, until sweet potatoes are tender and broccoli edges are charred.
