Garden-Style Heirloom Tomato Tart with Fresh Herb Crust

- 1/4 teaspoon salt
- 2 pounds, sliced 1/4 inch thick heirloom tomatoes
- 1 medium, thinly sliced onion
- 2 cloves, minced garlic
- 2 tablespoons extra-virgin olive oil
- 1/4 cup, torn fresh basil
- 1/4 cup, sliced mozzarella cheese
Instructions
- Step 1: Preheat oven to 375°F. Whisk 1 cup all-purpose flour, 1/4 teaspoon salt, and 1/4 cup finely chopped fresh herbs in a bowl. Cut in 1/2 cup cold cubed unsalted butter using a pastry cutter until mixture resembles coarse crumbs. Press into a 9-inch tart pan with removable bottom, prick base with fork, and chill for 30 minutes.
- Step 2: Heat 2 tablespoons extra-virgin olive oil in a large skillet over medium heat. Add 1 medium thinly sliced onion and cook 8-10 minutes until golden. Add 2 minced garlic cloves and cook 1 minute until fragrant.
- Step 3: Arrange 2 pounds sliced heirloom tomatoes in single layer over chilled crust. Top with cooked onion and garlic mixture, then scatter 1/4 cup torn fresh basil and 1/4 cup sliced mozzarella over tomatoes.
- Step 4: Bake at 375°F for 30-35 minutes until crust is golden and tomatoes bubble. Rest 10 minutes before slicing.
