Garlic-Herb Roasted Zucchini with Feta Crisps
Tender zucchini roasted until caramelized, topped with salty feta crisps and aromatic garlic herb oil.

Ingredients
- 2 medium, sliced 1/4 inch thick Zucchini
- 2 tbsp Olive oil
- 2, minced Garlic cloves
- 1/2 tsp Dried oregano
- 1/4 cup, crumbled Feta cheese
- 1/4 tsp Sea salt
- 1/8 tsp Black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Step 2: Toss 2 medium sliced zucchini with 2 tbsp olive oil, 2 minced garlic cloves, 1/2 tsp dried oregano, 1/4 tsp sea salt, and 1/8 tsp black pepper.
- Step 3: Spread zucchini in a single layer on the prepared baking sheet.
- Step 4: Roast for 18-20 minutes, flipping halfway through, until edges are golden brown and tender when pierced with a fork.
- Step 5: Remove from oven and sprinkle 1/4 cup crumbled feta cheese evenly over the zucchini.
- Step 6: Return to oven for 2-3 minutes until feta begins to crisp slightly.
- Step 7: Let rest for 5 minutes before serving to allow flavors to meld.
