Ginger-Turmeric Roasted Chicken with Sweet Potatoes

- 1.5 lbs chicken thighs
- 2 cups sweet potatoes
- 3 tbsp avocado oil
- 1.5 tbsp fresh ginger
- 1 tsp ground turmeric
- 1/2 tsp garlic powder
- 1 tsp sea salt
- 1/2 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Peel and dice sweet potatoes into 1/2-inch cubes. Toss with 1 tbsp avocado oil, 1/4 tsp sea salt, and 1/8 tsp black pepper on a large baking sheet.
- Step 2: Pat chicken thighs dry and rub with remaining 2 tbsp avocado oil, 1.5 tbsp minced ginger, 1 tsp turmeric, 1/2 tsp garlic powder, 3/4 tsp sea salt, and 1/4 tsp black pepper.
- Step 3: Arrange chicken thighs on top of sweet potatoes on the baking sheet, ensuring even spacing.
- Step 4: Roast for 35 minutes, flipping chicken halfway through, until chicken reaches 165°F (74°C) internally and sweet potatoes are golden and tender when pierced with a fork.
