Herb-Infused Jasmine Rice with Peas

Ingredients
- 1 cup jasmine rice
- 1 3/4 cups water
- 1/2 cup frozen peas
- 2 tbsp, chopped (parsley or cilantro) fresh herbs
- 1 tbsp butter
- to taste salt
Instructions
- Step 1: Rinse 1 cup jasmine rice under cold water until water runs clear, then drain. Combine rice, 1 3/4 cups water, and a pinch of salt in a medium saucepan, bring to a rolling boil over high heat.
- Step 2: Reduce heat to low, cover, and simmer for 15 minutes, or until rice is tender and water is absorbed, without lifting the lid.
- Step 3: Stir in 1/2 cup frozen peas and 2 tbsp chopped fresh herbs, add 1 tbsp butter, and let sit covered for 2 minutes. Fluff with a fork, season with additional salt if needed, and serve.
