Herb-Infused Salmon with Lemon and Green Beans

  1. Step 1: Pat salmon fillets dry with paper towels and season both sides with 1/2 tsp salt and 1/4 tsp black pepper.
  2. Step 2: Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering.
  3. Step 3: Place salmon skin-side down in the skillet and cook for 6-7 minutes until skin is golden and crispy.
  4. Step 4: Flip salmon and cook for 3-4 minutes more, until internal temperature reaches 145°F.
  5. Step 5: Remove salmon from skillet and set aside. Add 1 tbsp olive oil, 2 minced garlic cloves, and 12 oz trimmed green beans to the skillet.
  6. Step 6: Sauté for 5-6 minutes, stirring occasionally, until beans are tender-crisp and edges are slightly browned.
  7. Step 7: Stir 2 tbsp lemon juice and 1 tbsp chopped dill into the green beans, then return salmon to the skillet to warm through.
