Herb-Roasted Sweet Potato Hash

- 2 large, peeled and diced into 1/2-inch cubes sweet potatoes
- 1 medium, diced yellow onion
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup, chopped fresh parsley
Instructions
- Step 1: Preheat oven to 425°F (220°C). Toss 2 large peeled and diced sweet potatoes (1/2-inch cubes) with 2 tbsp olive oil, 1/4 tsp salt, and 1/4 tsp black pepper on a baking sheet.
- Step 2: Spread the sweet potatoes in a single layer and roast for 25 minutes, stirring once halfway, until tender and golden at the edges.
- Step 3: While the sweet potatoes roast, sauté 1 diced medium yellow onion in a skillet over medium heat for 8-10 minutes until caramelized and soft.
- Step 4: Stir 1 tsp dried thyme and 1 tsp dried rosemary into the caramelized onions, then add the roasted sweet potatoes and toss to combine. Sprinkle with 1/4 cup fresh chopped parsley and cook for 1 minute until heated through.
