Lemon-Dill Smashed New Potatoes with Spring Greens
Tender new potatoes smashed and roasted with lemon and dill, served over a bed of fresh spring greens for a simple, elegant side dish.

Ingredients
- 1.5 lbs new potatoes
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh dill
- 1 tbsp lemon juice
- 1/2 tsp lemon zest
- 4 cups spring greens
- 1 tbsp olive oil
Instructions
- Step 1: Preheat oven to 400°F (200°C). Halve or quarter large potatoes. Toss with 2 tbsp olive oil, salt, and pepper; spread on a baking sheet.
- Step 2: Roast 25-30 minutes until golden and crispy, flipping once halfway. While potatoes roast, combine dill, lemon juice, and zest in a small bowl.
- Step 3: Toss spring greens with 1 tbsp olive oil and a pinch of salt. When potatoes are done, toss with lemon-dill mixture until evenly coated. Serve immediately over spring greens.
