Lemon-Dill Smashed New Potatoes with Spring Greens

Tender new potatoes smashed and roasted with lemon and dill, served over a bed of fresh spring greens for a simple, elegant side dish.

  1. Step 1: Preheat oven to 400°F (200°C). Halve or quarter large potatoes. Toss with 2 tbsp olive oil, salt, and pepper; spread on a baking sheet.
  2. Step 2: Roast 25-30 minutes until golden and crispy, flipping once halfway. While potatoes roast, combine dill, lemon juice, and zest in a small bowl.
  3. Step 3: Toss spring greens with 1 tbsp olive oil and a pinch of salt. When potatoes are done, toss with lemon-dill mixture until evenly coated. Serve immediately over spring greens.
