Licensure Renewal Tomato Soup

Ingredients
- 14.5 oz can diced tomatoes
- 2 cups low-sodium chicken broth
- 1 medium, finely diced yellow onion
- 1 medium, grated carrot
- 2 sprigs fresh thyme
- 1/2 tsp dried basil
- 1/4 cup heavy cream
- 1/4 tsp salt
Instructions
- Step 1: Heat a large pot over medium heat. Add 1 medium diced yellow onion and 1 medium grated carrot, cooking for 5 minutes until softened and translucent.
- Step 2: Stir in 14.5 oz can diced tomatoes (with juice), 2 cups low-sodium chicken broth, 2 fresh thyme sprigs, and 1/2 tsp dried basil. Bring to a gentle simmer and cook uncovered for 15 minutes.
- Step 3: Remove thyme sprigs and discard. Use an immersion blender to puree the soup until completely smooth (or transfer to a blender in batches).
- Step 4: Return soup to low heat and stir in 1/4 cup heavy cream and 1/4 tsp salt. Heat gently for 2 minutes until warmed through but not boiling.
- Step 5: Serve hot, optionally garnished with extra fresh thyme.
