Lime-Cilantro Shrimp Skewers with Mango Salsa

  1. Step 1: In a bowl, combine 12 oz peeled and deveined shrimp with 3 tbsp finely chopped fresh cilantro, 2 tbsp lime juice, and 1 tbsp extra virgin olive oil. Toss to coat evenly and marinate for 15 minutes at room temperature.
  2. Step 2: Thread shrimp onto skewers, leaving 1/4 inch between pieces.
  3. Step 3: Heat a grill or grill pan over medium-high heat until hot. Place skewers on the grill and cook for 2-3 minutes per side until shrimp turn pink and opaque.
  4. Step 4: While shrimp cooks, combine 1/2 cup diced mango, 1/4 cup finely diced red bell pepper, and 1/4 cup finely diced red onion in a small bowl. Toss gently with a pinch of salt.
