Maple-Glazed Pork Tenderloin with Roasted Apples

  1. Step 1: Preheat oven to 375°F (190°C). Pat 1 lb pork tenderloin dry with paper towels and season with 1/4 tsp salt and 1/8 tsp black pepper.
  2. Step 2: Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat. Add pork tenderloin and sear for 3-4 minutes per side until golden brown.
  3. Step 3: Remove pork from skillet and set aside. Add 2 sliced apples to the skillet and cook for 3 minutes until edges soften.
  4. Step 4: Stir in 3 tbsp maple syrup, 1 tbsp balsamic vinegar, 2 minced garlic cloves, and 1 tsp chopped thyme. Cook for 2 minutes until sauce thickens slightly.
  5. Step 5: Return pork tenderloin to the skillet, nestling it into the apple mixture. Roast in the oven for 20-25 minutes, or until internal temperature reaches 145°F (63°C).
  6. Step 6: Let rest for 5 minutes before slicing. Serve with the roasted apples and pan sauce.
