Mini Blueberry Pancake Pizzas

- 1 cup All-purpose flour
- 1 teaspoon Baking powder
- 2 tablespoons Sugar
- 1/4 teaspoon Salt
- 3/4 cup Milk
- 1 Large egg
- 2 tablespoons Butter, melted
- 1/2 cup Blueberries
- 1/4 cup Greek yogurt
Instructions
- Step 1: Whisk 1 cup all-purpose flour, 1 teaspoon baking powder, 2 tablespoons sugar, and 1/4 teaspoon salt in a medium bowl until combined.
- Step 2: Beat 1 large egg and 3/4 cup milk in a separate bowl until smooth, then stir in 2 tablespoons melted butter.
- Step 3: Pour wet ingredients into dry ingredients and fold gently until just combined (batter should be slightly lumpy).
- Step 4: Heat a non-stick skillet over medium heat, lightly greasing with butter. Pour 1/4 cup batter per pancake into the skillet, spreading into 3-inch circles.
- Step 5: Cook for 2-3 minutes until bubbles form on the surface and edges set, then flip and cook for 1-2 minutes until golden.
- Step 6: Top each pancake with 2 tablespoons blueberries and 1 tablespoon Greek yogurt.
