Miso-Glazed Black Cod with Roasted Sweet Potatoes

- 4 fillets (6 oz each) black cod
- 2 tbsp white miso paste
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp sesame oil
- 1 cup peeled and diced 1/2-inch sweet potatoes
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 tbsp sesame seeds
Instructions
- Step 1: Preheat oven to 425°F. Toss sweet potatoes with 1 tbsp olive oil, 1/4 tsp salt, and 1/8 tsp pepper on a baking sheet.
- Step 2: Roast 20 minutes until tender and golden at edges.
- Step 3: Whisk miso paste, rice vinegar, honey, and 1 tsp sesame oil in a bowl until smooth.
- Step 4: Place cod fillets on a parchment-lined baking sheet. Brush each with miso glaze.
- Step 5: Bake 12-15 minutes until glaze bubbles and fish flakes easily. Garnish with sesame seeds before serving with roasted sweet potatoes.
