Miso-Glazed Tofu and Vegetable Rice Bowls
Savory miso-glazed tofu served over jasmine rice with stir-fried broccoli and carrots.

Ingredients
- 14 oz firm tofu
- 1 cup jasmine rice
- 2 cups broccoli
- 1 cup carrots
- 3 tbsp white miso paste
- 1 tbsp rice vinegar
- 1 tbsp maple syrup
- 1 tsp sesame oil
- 3 tbsp green onions
- 1 tsp toasted sesame seeds
Instructions
- Step 1: Rinse 14 oz firm tofu, pat dry, and cut into 1-inch cubes. Place in a bowl and toss with 3 tbsp white miso paste, 1 tbsp rice vinegar, 1 tbsp maple syrup, and 1 tsp sesame oil.
- Step 2: Cook 1 cup jasmine rice according to package directions. Meanwhile, steam 2 cups broccoli florets and 1 cup julienned carrots for 5 minutes until crisp-tender.
- Step 3: Heat a nonstick skillet over medium-high. Add tofu cubes and cook for 3-4 minutes per side until golden. Add steamed vegetables and toss to coat in miso glaze.
- Step 4: Divide cooked rice between bowls, top with tofu-vegetable mixture, and garnish with 3 tbsp sliced green onions and 1 tsp toasted sesame seeds.
