One-Pan Chicken with Lemon and Green Beans

Ingredients
- 1.5 lbs chicken thighs
- 1.5 lbs green beans
- 1 lemon
- 4 garlic cloves
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh thyme
Instructions
- Step 1: Pat 1.5 lbs bone-in, skin-on chicken thighs dry with paper towels. Season with 1/2 tsp salt and 1/4 tsp black pepper. Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering.
- Step 2: Place chicken thighs skin-side down in skillet; cook for 8-10 minutes until golden brown and crispy. Flip and cook for 5 minutes more.
- Step 3: Add 1.5 lbs trimmed green beans, 4 minced garlic cloves, 1 thinly sliced lemon, 1/4 tsp salt, 1/8 tsp black pepper, and 1 tbsp chopped fresh thyme to skillet. Stir to combine and cook for 8-10 minutes until green beans are tender and lemon slices are soft.
- Step 4: Discard lemon slices and serve chicken with green beans and pan juices.
