One-Pan Garlic Butter Chicken with Zucchini

Ingredients
- 2 (6 oz each), pounded to 1/2-inch thickness chicken breasts
- 1 medium, sliced into 1/4-inch rounds zucchini
- 2 tbsp butter
- 3 cloves, minced garlic
- 1, juiced lemon
- 1 tbsp, chopped dill
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Step 1: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Season chicken breasts with 1/2 tsp salt and 1/4 tsp black pepper. Cook for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F), then transfer to a plate and set aside.
- Step 2: Add 2 tbsp butter and minced garlic to the same skillet. Sauté for 1 minute until fragrant, then add sliced zucchini. Cook for 5-7 minutes, stirring occasionally, until zucchini is tender but still holds its shape.
- Step 3: Return chicken to the skillet. Squeeze 1 tbsp lemon juice and sprinkle with 1 tbsp chopped dill. Toss to coat and heat through for 1 minute. Serve immediately.
