One-Pan Garlic Herb Chicken with Cherry Tomatoes and Orzo

Ingredients
- 4 boneless, skinless (about 6 oz each) chicken breasts
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4, minced garlic cloves
- 1/2 cup dry white wine
- 1/2 cup chicken broth
- 1/2 cup orzo pasta
- 1 cup, halved cherry tomatoes
- 2 tbsp, chopped fresh parsley
- 1 tbsp fresh thyme leaves
Instructions
- Step 1: Season 4 boneless, skinless chicken breasts (about 6 oz each) with 1/2 tsp salt and 1/4 tsp black pepper on both sides. Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering.
- Step 2: Place chicken in skillet and cook for 5-6 minutes per side, until golden brown and internal temperature reaches 165°F; transfer to a plate and set aside.
- Step 3: Add 4 minced garlic cloves to skillet and cook for 1 minute, stirring constantly, until fragrant.
- Step 4: Pour in 1/2 cup dry white wine and 1/2 cup chicken broth, scraping the bottom of the skillet to release browned bits; bring to a simmer.
- Step 5: Stir in 1/2 cup orzo pasta and 1 cup halved cherry tomatoes, then bring to a gentle simmer. Cook for 8-10 minutes, stirring occasionally, until orzo is tender and sauce has thickened slightly.
- Step 6: Return chicken to skillet, add 2 tbsp fresh parsley and 1 tbsp fresh thyme leaves, and cook for 2 minutes more, until chicken is heated through and flavors are combined.
