One-Pan Lemon and Thyme Chicken with Potatoes and Green Beans

  1. Step 1: Preheat oven to 400°F. Place chicken thighs in a single layer in a large ovenproof skillet. Season with 1/2 tsp salt and 1/4 tsp black pepper.
  2. Step 2: Add halved baby potatoes and trimmed green beans to the skillet. Drizzle with 1 tbsp olive oil, then sprinkle with minced garlic, chopped thyme, 1/2 tsp salt, and 1/4 tsp black pepper. Toss to coat evenly.
  3. Step 3: Roast for 35-40 minutes until chicken is cooked through (165°F internal temperature) and vegetables are tender. Squeeze lemon juice over the top before serving.
