One-Pot Pasta with Sun-Dried Tomatoes and Fresh Herbs

Ingredients
- 12 oz spaghetti
- 2 tbsp olive oil
- 3 cloves, minced garlic
- 1/2 cup, drained and chopped sun-dried tomatoes
- 1/2 cup vegetable broth
- 1/4 cup, chopped fresh basil
- 1/4 cup, chopped fresh parsley
- 1/4 tsp red pepper flakes
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup, grated Parmesan cheese
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil, add 12 oz spaghetti, and cook for 8-10 minutes until al dente; reserve 1/2 cup pasta water before draining.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat, add 3 minced garlic cloves and 1/2 cup chopped sun-dried tomatoes, and cook for 2 minutes until fragrant.
- Step 3: Add 1/2 cup vegetable broth, 1/4 cup chopped fresh basil, 1/4 cup chopped fresh parsley, 1/4 tsp red pepper flakes, 1/2 tsp salt, and 1/4 tsp black pepper to the skillet, stirring to combine, then bring to a simmer for 2 minutes.
- Step 4: Add the drained spaghetti to the skillet along with 1/4 cup reserved pasta water, stirring to coat the pasta and create a light sauce, then cook for 1 minute until the sauce thickens slightly.
- Step 5: Remove from heat and stir in 1/4 cup grated Parmesan cheese until melted and combined.
