One-Pot Tomato Pasta with Spinach

Ingredients
- 8 oz spaghetti
- 2 tbsp olive oil
- 3 cloves garlic
- 14 oz diced tomatoes
- 1/2 cup chicken broth
- 2 cups fresh spinach
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated parmesan
Instructions
- Step 1: Bring a large pot of salted water to a boil. Cook 8 oz spaghetti for 8-10 minutes until al dente, then drain, reserving 1/2 cup pasta water.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 3 minced garlic cloves and cook 1 minute until fragrant.
- Step 3: Stir in drained spaghetti, 14 oz diced tomatoes, 1/2 cup chicken broth, 2 cups fresh spinach, 1/2 tsp salt, and 1/4 tsp black pepper. Cook 3 minutes until spinach wilts.
- Step 4: Add 1/4 cup reserved pasta water and 1/4 cup grated parmesan, tossing until sauce coats pasta evenly.
