Pan-Fried Zucchini and Bell Pepper Breakfast Hash

Ingredients
- 2 cups zucchini
- 1 medium bell peppers
- 1/2 medium onion
- 4 large eggs
- 2 tbsp olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 2 cups diced zucchini (1/2-inch cubes), 1 diced medium bell pepper (1/2-inch cubes), and 1/2 diced medium onion. Cook for 8-10 minutes, stirring occasionally, until vegetables are tender and slightly golden.
- Step 2: Season vegetables with 1/4 tsp salt and 1/8 tsp black pepper.
- Step 3: Push vegetables to the edges of the skillet to create a well in the center. Crack 4 large eggs into the well.
- Step 4: Cook for 3-4 minutes until egg whites are set but yolks remain runny, or until desired doneness is reached.
