  1. Step 1: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 2 cups diced zucchini (1/2-inch cubes), 1 diced medium bell pepper (1/2-inch cubes), and 1/2 diced medium onion. Cook for 8-10 minutes, stirring occasionally, until vegetables are tender and slightly golden.
  2. Step 2: Season vegetables with 1/4 tsp salt and 1/8 tsp black pepper.
  3. Step 3: Push vegetables to the edges of the skillet to create a well in the center. Crack 4 large eggs into the well.
