- 1 lb, peeled and deveined shrimp
- 1 bunch, trimmed asparagus
- 1, zest and 2 tbsp juice lemon
- 2 tbsp avocado oil
- 2 cloves, minced garlic
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat shrimp dry with paper towels and toss with 1/2 tsp sea salt, 1/4 tsp black pepper, and 1 tbsp lemon juice.
- Step 2: Heat 1 tbsp avocado oil in a large skillet over medium-high heat. Add asparagus in a single layer; cook for 4 minutes until crisp-tender, then flip and cook for 2 more minutes.
- Step 3: Add remaining 1 tbsp avocado oil to skillet, then add shrimp in a single layer. Sear for 1.5 minutes per side until opaque and pink, avoiding overcrowding.
- Step 4: Add minced garlic and lemon zest to skillet; cook for 30 seconds until fragrant. Immediately transfer shrimp and asparagus to a plate, drizzling with remaining lemon juice.
