Rainbow Veggie Stir-Fry with Lime-Cilantro Dressing

- 1 cup broccoli florets
- 1/2 cup, thinly sliced red bell pepper
- 1/2 cup, matchstick cut carrots
- 1/2 cup snow peas
- 2 cloves, minced garlic
- 1/4 cup, chopped fresh cilantro
- 2 tbsp lime juice
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp soy sauce
Instructions
- Step 1: Heat 1 tsp sesame oil in a large skillet over medium-high heat until shimmering. Add broccoli florets and carrots, stir-frying for 3 minutes until crisp-tender.
- Step 2: Add red bell pepper and snow peas, cooking for 2 minutes more until vegetables are bright and slightly charred at edges.
- Step 3: Stir in minced garlic and cook for 30 seconds until fragrant, then remove skillet from heat.
- Step 4: In a small bowl, whisk together lime juice, rice vinegar, soy sauce, and 1/4 cup chopped cilantro. Pour dressing over vegetables and toss gently until evenly coated and vegetables glisten.
