Rosemary-Garlic Chicken Casserole

Ingredients
- 1 pound boneless skinless chicken thighs
- 8 ounces mushrooms
- 2 tablespoons butter
- 2 cloves garlic
- 1 teaspoon fresh thyme
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- 1/4 cup grated Parmesan cheese
Instructions
- Step 1: Preheat oven to 375°F (190°C). In a large oven-safe skillet, melt 1 tablespoon butter over medium heat. Add 1 pound diced chicken thighs, season with salt and pepper, and cook for 5-7 minutes until golden brown; remove and set aside.
- Step 2: Add remaining 1 tablespoon butter to the skillet with 8 ounces sliced mushrooms and 2 minced garlic cloves. Sauté for 5 minutes until mushrooms are tender and release liquid.
- Step 3: Stir in 1 teaspoon fresh thyme, 1/2 cup heavy cream, and 1/4 cup chicken broth. Simmer for 2 minutes until sauce thickens, then return chicken to the skillet. Sprinkle 1/4 cup grated Parmesan over the top and bake uncovered for 15-20 minutes until bubbly and cheese is golden.
