Rosemary-Thyme Baked Chicken

Ingredients
- 4 boneless, skinless (about 1.5 lbs) chicken breasts
- 2 tbsp olive oil
- 2 tbsp finely chopped fresh rosemary
- 1 tbsp finely chopped fresh thyme
- 3 minced garlic cloves
- 1 (zest of 1 tsp, juice of 1 tbsp) lemon
- 1 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chicken broth
Instructions
- Step 1: Preheat oven to 400°F (200°C). Pat chicken breasts dry with paper towels and season both sides with 1 tsp salt and 1/4 tsp black pepper.
- Step 2: In a small bowl, combine 2 tbsp olive oil, 2 tbsp chopped rosemary, 1 tbsp chopped thyme, 3 minced garlic cloves, 1 tsp lemon zest, and 1 tbsp lemon juice. Rub this mixture evenly over chicken breasts.
- Step 3: Place chicken in a baking dish and pour 1/4 cup chicken broth around the chicken. Bake for 20-25 minutes until internal temperature reaches 165°F (74°C), basting once with pan juices.
- Step 4: Let rest 5 minutes before serving, then drizzle with any remaining pan juices.
