Saffron-Infused Linguine with Roasted Cherry Tomatoes

Ingredients
- 12 oz linguine
- 2 cups cherry tomatoes
- 1/4 tsp saffron threads
- 3 tbsp olive oil
- 2 cloves, minced garlic
- 1/4 cup, torn fresh basil
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss 2 cups cherry tomatoes with 1 tbsp olive oil and 1/4 tsp salt on a baking sheet. Roast for 15 minutes until blistered and juicy.
- Step 2: Bring a large pot of salted water to a boil. Add 12 oz linguine and cook for 8-10 minutes until al dente. Reserve 1/2 cup pasta water before draining.
- Step 3: While pasta cooks, heat 2 tbsp olive oil in a skillet over medium heat. Add 2 minced garlic cloves and sauté for 1 minute until fragrant but not browned.
- Step 4: Stir in roasted tomatoes, 1/4 tsp saffron threads, and 2 tbsp reserved pasta water. Cook for 2 minutes until sauce thickens slightly. Toss with drained linguine, adding more pasta water as needed to coat strands. Stir in 1/4 cup torn basil before serving.
