Instructions
- Step 1: Rinse and pat dry 4 salmon fillets. Season both sides with 1 tsp sea salt and 1/2 tsp black pepper.
- Step 2: Heat 2 tbsp olive oil in a large nonstick skillet over medium-high heat. Place salmon fillets skin-side down and cook for 4-5 minutes until skin is crisp and golden. Flip and cook for another 3-4 minutes until salmon is cooked through but still moist. Remove salmon and keep warm.
- Step 3: Meanwhile, pulse 1 medium cauliflower head in a food processor until it forms rice-sized grains, about 5 pulses.
- Step 4: In another large skillet, heat 2 tbsp olive oil over medium heat. Add 2 minced garlic cloves and sauté for 30 seconds until fragrant. Add the riced cauliflower, 1 tsp sea salt, 1/2 tsp black pepper, 1 tbsp lemon zest, and 1 tbsp chopped fresh dill. Cook, stirring frequently, for 5-7 minutes until cauliflower is tender but not mushy.
- Step 5: Remove skillet from heat and stir in 2 tbsp fresh lemon juice and remaining 1 tbsp chopped dill. Adjust seasoning to taste.
- Step 6: Serve the salmon fillets on a bed of lemon-dill cauliflower rice, garnished with lemon wedges if desired.
