Sesame-Ginger Baked Chicken with Broccoli and Carrots

Ingredients
- 1.5 lbs boneless skinless chicken thighs
- 2 cups broccoli florets
- 2 medium carrots
- 2 tbsp sesame oil
- 2 tbsp fresh ginger
- 3 cloves garlic cloves
- 3 tbsp coconut aminos
- 1 tbsp lime juice
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 tbsp sesame seeds
Instructions
- Step 1: Preheat oven to 400°F (200°C). In a bowl, combine 2 tbsp sesame oil, 2 tbsp minced ginger, 3 minced garlic cloves, 3 tbsp coconut aminos, 1 tbsp lime juice, 1/2 tsp sea salt, and 1/4 tsp black pepper. Add 1.5 lbs chicken thighs and toss until evenly coated.
- Step 2: Arrange 2 cups broccoli florets and 2 peeled, sliced carrots on a parchment-lined baking sheet. Place marinated chicken thighs on top.
- Step 3: Bake for 25-30 minutes, or until chicken reaches 165°F (74°C) and vegetables are tender with slight caramelization.
- Step 4: Remove from oven, sprinkle with 1 tbsp sesame seeds, and serve immediately.
