Sesame-Ginger Tofu Stir-Fry with Broccoli and Snap Peas

Ingredients
- 14 oz firm tofu
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- 3 cups broccoli florets
- 1 cup snap peas
- 2 cloves garlic
- 1 tbsp ginger
- 2 tbsp vegetable oil
- 1/4 cup sesame seeds
Instructions
- Step 1: Press 14 oz firm tofu to remove excess water, then cut into 1-inch cubes. Toss with 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp sesame oil, and 1 tbsp cornstarch until coated; let sit for 10 minutes.
- Step 2: Heat 2 tbsp vegetable oil in a wok over medium-high heat. Add 3 cups broccoli florets and 1 cup snap peas, stir-frying for 4 minutes until bright green and crisp-tender.
- Step 3: Add 2 minced garlic cloves and 1 tbsp grated ginger, cooking for 1 minute until fragrant. Add marinated tofu and stir-fry for 5 minutes until golden. Sprinkle with 1/4 cup sesame seeds and serve immediately.
