Simple Irish Root Vegetable Soup

Ingredients
- 2 tablespoons butter
- 1 large, diced onion
- 2, peeled and diced carrots
- 2, peeled and diced parsnips
- 1, peeled and diced turnip
- 2 cloves, minced garlic
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 bay leaf

- to taste black pepper
- 2 tablespoons heavy cream
Instructions
- Step 1: Melt 2 tablespoons butter in a large pot over medium heat. Add 1 large diced onion, 2 diced carrots, 2 diced parsnips, and 1 diced turnip. Cook for 5 minutes until vegetables begin to soften, stirring occasionally.
- Step 2: Stir in 2 minced garlic cloves, 1 teaspoon dried thyme, and 1 bay leaf. Cook for 1 minute until fragrant.
- Step 3: Add 4 cups vegetable broth, bring to a simmer, cover, and cook for 30 minutes until vegetables are very tender.
- Step 4: Remove bay leaf, then blend soup until smooth using an immersion blender or regular blender.
- Step 5: Season with salt and pepper to taste, then stir in 2 tablespoons heavy cream for richness and serve immediately.
