Soy-Glazed Salmon with Roasted Sweet Potatoes

Ingredients
- 4 (6 oz each) salmon fillets
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 2 tbsp olive oil
- 2 medium, peeled and cut into 1/2-inch cubes sweet potatoes
- 1, cut into wedges red onion
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- to garnish sesame seeds
Instructions
- Step 1: Preheat oven to 425°F. Line a baking sheet with parchment paper.
- Step 2: Whisk 3 tbsp soy sauce, 2 tbsp honey, 1 tbsp rice vinegar, and 1 tsp sesame oil in a small bowl to make glaze.
- Step 3: Toss 2 medium peeled and cubed sweet potatoes and 1 red onion cut into wedges with 2 tbsp olive oil, 1/2 tsp garlic powder, 1/2 tsp paprika, salt, and pepper. Spread in an even layer on baking sheet and roast 15 minutes.
- Step 4: Place 4 salmon fillets on baking sheet. Brush each with 1 tbsp glaze mixture and season with salt and pepper.
- Step 5: After 15 minutes, push vegetables to one side of baking sheet, place salmon on the other side, and brush with remaining glaze. Return to oven and roast 12-15 minutes until salmon is opaque and flakes easily.
- Step 6: Remove from oven, garnish with sesame seeds, and serve immediately with roasted vegetables.
