Stir-Fried Tofu with Asparagus and Sesame

Ingredients
- 14 oz, pressed and cut into 1/2-inch cubes firm tofu
- 2 tbsp vegetable oil
- 1 cup, trimmed and cut into 1-inch pieces asparagus
- 3 cloves, minced garlic
- 1 tbsp, minced ginger
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp sesame seeds
- 1/4 cup, chopped scallions
Instructions
- Step 1: Heat 2 tbsp vegetable oil in a large skillet or wok over medium-high heat; add 1/2-inch tofu cubes and cook for 5 minutes, turning occasionally, until golden brown on all sides.
- Step 2: Add 1 cup asparagus, 3 minced garlic cloves, and 1 tbsp minced ginger to the skillet; stir-fry for 3-4 minutes until asparagus is crisp-tender and slightly charred.
- Step 3: Stir in 2 tbsp soy sauce, 1 tbsp rice vinegar, and 1 tsp sesame oil; cook for 1 minute until the sauce thickens slightly and coats the ingredients.
- Step 4: Remove from heat, stir in 1 tbsp sesame seeds and 1/4 cup chopped scallions, then serve immediately.
