Stir-Fried Tofu with Ginger-Soy Sauce and Mixed Vegetables

Ingredients
- 14 oz, pressed and cubed firm tofu
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp, minced ginger
- 2 tbsp vegetable oil
- 2 cups, broccoli, bell peppers, and carrots, cut into small pieces mixed vegetables
- 1/4 cup, sliced green onions
Instructions
- Step 1: In a small bowl, whisk together 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp honey, and 1 tsp minced ginger to make the sauce.
- Step 2: Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add 14 oz cubed tofu and cook for 5 minutes until golden on all sides, then set aside.
- Step 3: Add 2 cups mixed vegetables (broccoli, bell peppers, carrots), cut into small pieces, to the skillet and stir-fry for 4 minutes until crisp-tender.
- Step 4: Return the tofu to the skillet, pour in the sauce, and toss to coat. Cook for 2 more minutes until heated through.
- Step 5: Sprinkle with 1/4 cup sliced green onions and serve immediately.
