Stir-Fried Tofu with Ginger-Soy Sauce and Mixed Vegetables

  1. Step 1: In a small bowl, whisk together 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp honey, and 1 tsp minced ginger to make the sauce.
  2. Step 2: Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add 14 oz cubed tofu and cook for 5 minutes until golden on all sides, then set aside.
  3. Step 3: Add 2 cups mixed vegetables (broccoli, bell peppers, carrots), cut into small pieces, to the skillet and stir-fry for 4 minutes until crisp-tender.
  4. Step 4: Return the tofu to the skillet, pour in the sauce, and toss to coat. Cook for 2 more minutes until heated through.
  5. Step 5: Sprinkle with 1/4 cup sliced green onions and serve immediately.
