  1. Step 1: Heat 1 tbsp olive oil in a large pot over medium heat. Add 1 diced medium onion, 2 minced garlic cloves, and 1 diced red bell pepper. Sauté for 5 minutes until softened, stirring frequently.
  2. Step 2: Add 2 cups fresh corn, 1 cup diced potatoes, 1 cup chicken broth, 1/2 tsp smoked paprika, 1/4 tsp cayenne pepper, 1/2 tsp salt, and 1/4 tsp black pepper. Simmer for 15 minutes until potatoes are fork-tender.
  3. Step 3: Stir in 1 lb peeled and deveined shrimp and 1/2 cup heavy cream. Cook 3-4 minutes until shrimp turn pink and opaque. Stir in 2 tbsp fresh parsley and adjust seasoning with salt if needed.
