Turmeric-Glazed Sweet Potato and Black Bean Salad

Ingredients
- 2 lbs sweet potatoes
- 1 can (15 oz) black beans
- 2 tbsp olive oil
- 1 tsp turmeric
- 1/2 tsp cumin
- 1 lime
- 1/2 cup red onion
- 1/4 cup fresh cilantro
Instructions
- Step 1: Preheat oven to 400°F. Dice sweet potatoes into 1/2-inch cubes, toss with 1 tbsp olive oil, turmeric, cumin, 1/4 tsp salt, and 1/8 tsp pepper; spread on a baking sheet.
- Step 2: Roast for 25 minutes until tender and slightly caramelized, stirring once halfway through. Meanwhile, drain and rinse black beans thoroughly.
- Step 3: Chop red onion and cilantro. Toss roasted sweet potatoes, black beans, red onion, cilantro, and lime juice (from half the lime) with remaining 1 tbsp olive oil and 1/4 tsp salt until combined.
