Turmeric-Glazed Sweet Potato and Black Bean Salad

  1. Step 1: Preheat oven to 400°F. Dice sweet potatoes into 1/2-inch cubes, toss with 1 tbsp olive oil, turmeric, cumin, 1/4 tsp salt, and 1/8 tsp pepper; spread on a baking sheet.
  2. Step 2: Roast for 25 minutes until tender and slightly caramelized, stirring once halfway through. Meanwhile, drain and rinse black beans thoroughly.
  3. Step 3: Chop red onion and cilantro. Toss roasted sweet potatoes, black beans, red onion, cilantro, and lime juice (from half the lime) with remaining 1 tbsp olive oil and 1/4 tsp salt until combined.
