Baked Zucchini and Gruyere Gratin

Ingredients
- 2 medium zucchini
- 1/2 cup, grated Gruyere cheese
- 1/4 cup, grated Parmesan cheese
- 2 tbsp butter
- 1/4 cup heavy cream
- 1 tsp dried thyme
- pinch salt
- pinch black pepper
Instructions
- Step 1: Preheat oven to 375°F (190°C). Grease a 9x9 inch baking dish with 2 tbsp butter.
- Step 2: Slice 2 medium zucchinis into 1/4-inch thick rounds and arrange in a single layer in the dish.
- Step 3: Sprinkle 1/4 cup Gruyere cheese, 1/4 cup Parmesan cheese, 1 tsp dried thyme, and a pinch each of salt and pepper over the zucchini.
- Step 4: Whisk 1/4 cup heavy cream with the remaining 1/4 cup Gruyere cheese in a small bowl.
- Step 5: Pour the cream mixture evenly over the zucchini, then bake for 25-30 minutes until golden and bubbly around the edges.
