- 2 tsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp paprika
- 2 tbsp olive oil
- 1 cup corn kernels
- 1 cup cherry tomatoes
- 1/4 cup red onion
- 1 tbsp lime juice
- 2 tbsp fresh cilantro
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat 1.5 lbs catfish fillets dry with paper towels, then season with 2 tsp Cajun seasoning, 1 tsp garlic powder, 1 tsp paprika, 1/2 tsp salt, and 1/4 tsp black pepper.
- Step 2: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add catfish fillets and cook for 4-5 minutes per side until blackened and cooked through.
- Step 3: While catfish cooks, combine 1 cup corn kernels, 1 cup halved cherry tomatoes, 1/4 cup finely chopped red onion, 1 tbsp lime juice, and 2 tbsp chopped cilantro in a bowl.
- Step 4: Serve blackened catfish with the corn and tomato salad spooned over the top.
