Cauliflower Rice Stir-Fry with Ground Beef and Bell Peppers

Ingredients
- 1 lb Ground beef
- 2 cups Cauliflower rice
- 1 cup Bell peppers
- 1/2 cup Yellow onion
- 2 cloves Garlic
- 3 tbsp Coconut aminos
- 2 tbsp Olive oil
- 1/2 tsp Salt
- 1/4 tsp Black pepper
Instructions
- Step 1: Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering. Add 1/2 cup diced yellow onion and 2 minced garlic cloves, sautéing for 2 minutes until fragrant and onions are translucent.
- Step 2: Add 1 lb ground beef to the skillet, breaking it apart with a spatula. Cook for 5 minutes until browned and no longer pink, then drain any excess fat.
- Step 3: Stir in 1 cup sliced mixed bell peppers and cook for 3 minutes until crisp-tender.
- Step 4: Add 3 tbsp coconut aminos, 1/2 tsp salt, and 1/4 tsp black pepper, stirring to combine. Cook for 1 minute until the flavors meld.
- Step 5: Add 2 cups fresh cauliflower rice and cook for 4-5 minutes, stirring occasionally, until the cauliflower rice is tender but still has a slight bite.
