Dilim Pizza: Thin Sliced Herbed Pizza with Sumac

Ingredients
- 250g All-purpose flour
- 150ml Water, lukewarm
- 7g Active dry yeast
- 5g Salt
- 15ml Olive oil
- 2 tbsp Extra virgin olive oil
- 1 tbsp Za'atar spice blend
- 1/2 tsp Sumac
- 2 tbsp Fresh parsley, finely chopped
- 50g Feta cheese, crumbled
Instructions
- Step 1: In a large bowl, combine 250g all-purpose flour, 5g salt, and 7g active dry yeast. Create a well in the center and add 150ml lukewarm water and 15ml olive oil. Mix until a shaggy dough forms, then knead on a floured surface for 8-10 minutes until smooth and elastic.
- Step 2: Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 1 hour until doubled in size.
- Step 3: Punch down the dough, roll into a 1/8-inch-thick rectangle, and cut into 12 equal strips (1 inch wide by 6 inches long).
- Step 4: Preheat oven to 475°F (245°C) with a baking sheet inside for 20 minutes.
- Step 5: Arrange strips on the hot baking sheet in a single layer without overlapping.
- Step 6: Brush each strip with 2 tbsp extra virgin olive oil, then sprinkle evenly with 1 tbsp za'atar and 1/2 tsp sumac.
- Step 7: Bake for 6-8 minutes until golden and crisp around the edges.
- Step 8: Remove from oven, immediately top with 2 tbsp fresh parsley and 50g crumbled feta.
