- 2 tbsp olive oil
- 2 cups diced sun-ripened tomatoes
- 1/2 cup thinly sliced red onion
- 1/4 cup chopped fresh basil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: In a bowl, whisk together 3 tbsp lemon juice, 1 tbsp chopped rosemary, 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper. Place chicken breasts in the marinade, ensuring they're fully coated, and let sit for 20 minutes.
