Haitian Salt Cod Fritters with Lime-Cilantro Sauce

Ingredients
- 8 oz, soaked 12 hours and flaked salt cod
- 1 medium, peeled and grated potato
- 3, finely chopped scallion
- 1/4 cup all-purpose flour
- 1 large eggs
- 1 cup for frying vegetable oil
- 2, juiced lime
- 1/4 cup, chopped cilantro
- 1/4 tsp red pepper flakes
Instructions
- Step 1: In a bowl, combine flaked salt cod, grated potato, scallions, flour, and egg. Mix until evenly incorporated, then refrigerate for 30 minutes.
- Step 2: Heat vegetable oil in a deep skillet to 350°F (175°C). Drop 2 tbsp of mixture per fritter into oil, flattening slightly with a spoon.
- Step 3: Fry fritters for 3 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate to drain.
- Step 4: Whisk lime juice, cilantro, and red pepper flakes in a small bowl. Serve fritters with lime-cilantro sauce for dipping.
