Ingredients
- 1 lb, skin-on Chicken thighs
- 2 tbsp Olive oil
- 1, zested and juiced Lemon
- 1 tsp, fresh chopped Rosemary
- 2 cloves, minced Garlic
- 1/2 tsp Salt
- 1/4 tsp Black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels and season both sides with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 2: In a small bowl, mix 2 tbsp olive oil, 2 minced garlic cloves, 1 tsp chopped rosemary, and zest/juice of 1 lemon.
- Step 3: Rub the olive oil mixture evenly over chicken thighs, then arrange in a single layer in a baking dish.
- Step 4: Bake for 25-30 minutes until golden brown and internal temperature reaches 165°F (74°C), basting once halfway through.
