- 2 tbsp finely chopped fresh parsley
- 1 tsp finely chopped fresh thyme
- 1/2 cup grated carrot
- 3 tbsp tomato paste
- 1 tbsp apple cider vinegar
- 1 tsp olive oil
Instructions
- Step 1: Preheat oven to 375°F (190°C). In a bowl, combine 1 lb ground beef, 2 tbsp chopped fresh parsley, 1 tsp chopped fresh thyme, and 1/2 cup grated carrot. Mix gently with hands until just combined, avoiding overmixing.
- Step 2: Press the mixture into a loaf pan lined with parchment paper, smoothing the top with a spatula. Brush the top with 1 tsp olive oil to prevent drying.
- Step 3: Bake for 25-28 minutes until the internal temperature reaches 160°F (71°C) and the edges are golden. While baking, mix 3 tbsp tomato paste and 1 tbsp apple cider vinegar in a small bowl.
- Step 4: Remove loaf from oven, let rest for 5 minutes, then spread the tomato glaze evenly over the top. Slice and serve warm.
