Herb-Infused Olive Oil and Heirloom Tomato Bruschetta

Ingredients
- 1/2 cup extra-virgin olive oil
- 2 tbsp fresh thyme leaves
- 2 tbsp fresh rosemary
- 1/2 tsp garlic powder
- 1/4 cup fresh basil
- 3 heirloom tomatoes
- 1/2 cup crusty bread
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Whisk 1/2 cup extra-virgin olive oil, 2 tbsp fresh thyme, 2 tbsp chopped fresh rosemary, and 1/2 tsp garlic powder in a small bowl.
- Step 2: Toss diced heirloom tomatoes with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 3: Brush both sides of 1/2 cup sliced crusty bread with herb oil mixture.
- Step 4: Bake on a preheated sheet at 375°F (190°C) for 8-10 minutes until golden and crisp.
- Step 5: Top toasted bread with seasoned tomatoes and a drizzle of remaining herb oil before serving.
