Honey-Dijon Pork Tenderloin with Roasted Sweet Potatoes

- 1.5 lbs, trimmed pork tenderloin
- 2 lbs, peeled and cubed sweet potatoes
- 3 tbsp olive oil
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp dried rosemary
Instructions
- Step 1: Preheat oven to 400°F. Place 2 lbs peeled and cubed sweet potatoes on a baking sheet, drizzle with 2 tbsp olive oil, and season with 1/2 tsp salt and 1/4 tsp black pepper. Toss to coat.
- Step 2: Roast 20 minutes until potatoes are tender and golden at edges.
- Step 3: Whisk 2 tbsp honey, 1 tbsp Dijon mustard, 1 tsp garlic powder, and 1/4 tsp black pepper in a small bowl.
- Step 4: Rub 1.5 lbs pork tenderloin with 1 tbsp olive oil, then season with 1/2 tsp salt and 1 tsp dried rosemary. Pat to adhere.
- Step 5: Place pork on a separate baking sheet and brush with honey-Dijon mixture. Bake 25-30 minutes until internal temperature reaches 145°F.
- Step 6: Let rest 5 minutes before slicing, then serve with roasted sweet potatoes.
