Honey-Soy Glazed Salmon with Sesame and Green Onions

Ingredients
- 4 (6 oz each), skin-on salmon fillets
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp, grated ginger
- 2 tbsp sesame oil
- 1, thinly sliced green onions
- 1 tbsp sesame seeds
- 1/2 cup (broccoli, carrots, snap peas) mixed vegetables
Instructions
- Step 1: Preheat oven to 400°F (200°C). Place 4 salmon fillets skin-side down on a parchment-lined baking sheet.
- Step 2: Whisk together 3 tbsp soy sauce, 2 tbsp honey, 1 tbsp rice vinegar, and 1 tsp grated ginger in a small bowl. Brush half the glaze over salmon fillets.
- Step 3: Roast salmon in preheated oven for 12-15 minutes until cooked through and flakes easily with a fork.
- Step 4: Heat 2 tbsp sesame oil in a skillet over medium-high heat. Add 1/2 cup mixed vegetables and stir-fry for 5-6 minutes until crisp-tender.
- Step 5: Brush remaining glaze over salmon. Sprinkle with 1 tbsp sesame seeds and 1 thinly sliced green onion. Serve immediately with stir-fried vegetables.
