Instructions
- Step 1: Preheat oven to 375°F (190°C). Place 1 cup chopped macadamia nuts in a shallow dish. In another dish, place 1/2 cup all-purpose flour. In a third dish, beat 1 large egg.
- Step 2: Season 4 chicken breasts with 1 tsp salt and 1/2 tsp black pepper. Dredge each breast in flour, then dip in beaten egg, and finally press into chopped macadamia nuts to coat thoroughly.
- Step 3: Heat 2 tbsp olive oil and 2 tbsp unsalted butter in a large ovenproof skillet over medium heat. Sear the coated chicken breasts for 3 minutes per side until golden brown.
- Step 4: Transfer the skillet to the oven and bake the chicken for 12-15 minutes until cooked through (internal temperature 165°F).
- Step 5: Meanwhile, in a saucepan, melt 1 tbsp butter over medium heat. Whisk in 1 tbsp ground wattleseed and cook for 1 minute until fragrant. Gradually add 1 1/2 cups chicken broth, whisking constantly, and simmer for 5 minutes until slightly thickened.
- Step 6: Stir in 1/4 cup heavy cream and season with salt and pepper to taste. Serve the macadamia-crusted chicken with the wattleseed gravy drizzled over the top.
